Resepi Koma-koma Ayamas      

Resepi kita kali ini adalah Resepi Koma-koma Ayamas  yang di sediakan oleh Chef wan


Bahan-bahan:
1kg Ayam Segar Ayamas

Bahan-bahan A (ditumbuk halus):
20 gm Bawang Putih - dicincang
30 gm Bawang Merah - dicincang
10 gm Kencur/Cekur - diramas
10 gm Halia - dihancurkan
10 gm Lengkuas - dihancurkan
5 gm Kunyit - dihancurkan
5 gm Belacan
1 gm Lada Hitam - ground
1 gm Ketumbar
1 gm Buah Keras
1 Cili Merah - dibelah dua dan buang biji
Bahan-bahan B:
2 camca besar Minyak Sayur
2 gm Gula Melaka
1 batang Serai
2 keping Daun Limau Purut
500 ml Air Rebusan Ayam

Untuk Hiasan:
Bawang Goreng dan Cili Merah yang dihiris

Cara-cara:
1. Campurkan semua bahan-bahan A dalam lesung dan tumbuk sehingga halus. Panaskan minyak dalam periuk dan goreng bahan yang ditumbuk tadi sampai wangi selama 2 minit. Masukkan ayam.

2. Setelah ayam agak keperangan, masukkan bahan-bahan B dan masak selama 5 minit.

3. Masukkan air rebusan ayam dan renihkan selama 45 minit - 1 jam sehingga ayam lembut. Tambah garam dan lada secukup rasa.
