Not too many people are fond about eating Liver but once they try this recipe I am sure they will change their mind.
1 Pound (half a kilogram) Fresh liver, beef or lamb
1/4 Cup Canola oil
2 Diced Onions
Few Garlic cloves, minced
One bunch of Fresh Cilantro
1/4 Cup Pomegranate Molasses
Salt, Black Pepper and Allspice to taste
*Wash the fresh Liver with water and drain. Add white vinegar to it, mix well. This step is done to get rid of any unpleasant odor. It is important to get a flavorful taste of the liver. I also recommend using fresh liver, never use the frozen.
*Dice the onions, add to the preheated canola oil. Saute until the onions are soft
*Add the liver and mix with the onions until the liver changes in color, this step takes few minutes.Keep the stove top on high heat.
*Add the dry coriander and the seasoning. Cover and cook on high heat , this step helps in drawing the liquids from the liver and onions. Once the mix is bubbly, lower the heat.
*Add the minced garlic and mix.
*Add the freshly cut cilantro. Mix well.
*Let cook for five minutes then add the pomegranate molasses. Mix and cook for another few minutes.
*Do not over cook the liver, it gets tough if you do. It should be done when it is soft, the whole cooking processes should not take more than 30-35 minutes.
